Feel Like a Local at The Verandah Restaurant

The Hunter Valley wine culture has inspired a strong food culture and vice versa. The two simply go hand in hand, and it is no coincidence that some of the best restaurants in the world happen to be located in some of the finest wine-growing regions – where wine is often just as prevalent in the cooking process as it is in the glass.


Located on the award-winning Calais Estate and situated in the heart of wine country, The Verandah Restaurant has something for everyone. With all-weather dining on the Verandah or inside by the fireplace on those cold winter nights, The Verandah Restaurant provides a dining experience that encapsulates the essence of the Hunter lifestyle. A contemporary Tapas-style menu showcasing the best local produce ensures time spent dining at The Verandah will remain in your memory forever.


Newcastle born Chef, Timothy Suffell is very much at home at the Verandah Restaurant which he and his wife Amanda own and operate. Tim was drawn to food at a very young age largely due to the influence of his grandmother – a Fellow of the City of London’s Worshipful Company of Cooks for her skill in confectionery and pastry.


His grandmother instilled upon him not only her knowledge but her creed: good food, good wine, good friends. After completing school, Timothy headed to Sydney, where he began his apprenticeship at Hugo’s in Bondi Beach (one chef hat restaurant) before moving back to the Hunter Valley to finish his training under Executive Chef Jean Marie at Cypress Lakes Resort.
Throughout his career, Timothy has had the privilege of working at some of the finest establishments and with the best chefs the country has to offer including Warren Turnbull at Sydney’s Cruise (two chef hat restaurant) and the opulent Lizard Island Resort.


The Verandah Restaurant is perhaps most well known for the monthly ‘locals nights’ – where you don’t actually have to be a local!. Thanks to Chef Timothy’s love of travelling and the large impact his travels have had on his style of cooking; each night has a food theme. Eastern Mediterranean techniques and flavours shining through his classical French training to ensure each dish he prepares is a unique gastronomic exploration.

Locals nights start with canapes and bubbles on the verandah, followed by a delicious five-course tapas style degustation. The value is amazing at $50 per person, and on these special occasions, you can even BYO with no corkage charged. The December Christmas themed Locals night will be held Sunday 15 December with pre-dinner drinks, and canapes commence at 6pm.
