Talits Estate

2014 Blanc de Blancs

Blanc de Blancs is the French term for ‘white from whites’ and refers to the classic Champagne style of sparkling wine made entirely from Chardonnay. The Chardonnay used in this wine is sourced from 40yr old vines.

TASTING This Blanc de Blancs is fresh and lively with the palate displaying citrus, green apple and grapefruit characters with some yeasty overtones. It has a creamy mousse, a fine elegant bead and a crisp long finish. The wine underwent secondary fermentation in the bottle and was aged on lees for 7 years before riddling and disgorge.

FOOD MATCH Fresh oysters, goats cheese and figs, trout, lobster and sashimi.

CELLARING Drinking beautifully now but can age another 10 years.



Peterson House

Dolce Per Tutti Moscato

Dolce per Tutti means “Sweet for Everyone” in Italian, a reference to its heritage and its wide appeal.

TASTING Summer fruits of strawberry and raspberry are mixed with rose petals, a delicate musk character is reminiscent of musk sticks. The acidity of the bubbles offset the rich sweetness yet finishes clean and crisp. The high residual sugar will surprise even those with a dry palate.

FOOD MATCH Great with a fruity dessert, or baked cheesecake. The low alcohol lends itself to an early start with a sumptuous morning tea.

CELLARING Sparkling wines are made to be served cold – less than 4 C Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours. Cellar for 18 months.

Kelman Vineyard

Late Disgorged Blanc De Blancs

Made from Chardonnay grapes in the Méthode Traditionelle. The grapes were picked earlier than normal and the juice spent four years on lees until disgorgement. An exceptional drop for any special occasion. Silver medal, 93 points James Halliday.

TASTING Light honey gold with a faint grassy aroma and flavours of toasty brioche, grilled nuts, gingerbread and nashi pear. A lovely fine bead and creamy texture.

FOOD MATCH Savoury – seafood, delicate white fish, salmon, chicken, light spicy pasta. Sweet – pavlova, berries, panna cotta, Danish pastries

NV Sparkling Brut

Savannah Estate Wines are produced from small select parcels of premium fruit grown in renowned viticulture regions throughout Australia. Our Sparkling Brut will definitely hit the spot and is certain to impress all your brunch attendees

TASTING A rich, clean, elegant and dry sparkling with a gorgeous persistent bead. A Chardonnay Semillon blend with a dash of Verdelho to round it out, the palate is fullflavoured showing fruit flavours of nectarine and white peach with supporting sherbet flavour. The back palate is clean, dry and refreshing.

Limited Release Sparkling Chardonnay

Briar Ridge’s Blanc de Blanc sparkling is made using 100% Chardonnay in the traditional

method to create a richly textured, creamy mouthfeel and fine mousse. Aged on lees for 5 years prior to disgorgement and release, this is their most premium sparkling wine.

TASTING White peach and green apple fruit framed by toasted brioche, creamy texture and a crisp acidity.

FOOD MATCH Sydney rock oysters with yuzu dressing.

Tranquil Vale Vineyard


Made in the Traditional Method, ‘Pukka’ is crisp and refreshing with notes of green apple, blossom and brioche. This spectacular sparkling wine is a blend of Estate Grown Semillon and Chardonnay.

TASTING Light straw colour with fine persistent bead, a clean, crisp palate, notes of fresh green apple combined with developing aged characters and generous mouth feel.

FOOD MATCH Oysters, scallops or Japanese Tempura.

CELLARING This wine has already been aged prior to release so it is perfect to drink now– it will continue to delight for the next 2 years.
