If the Hunter Valley has a signature, it is Shiraz. The variety has been grown here since the region's earliest days, long before Shiraz became Australia's calling card, and it remains the backbone of Hunter Valley red winemaking today.


What sets Hunter Shiraz apart from its counterparts elsewhere in the country is restraint. Rather than the big, jammy, high-alcohol style found in some warmer regions, Hunter Shiraz tends toward something more medium-bodied and savoury, built on red and dark berry fruit, warm spice and a distinctive earthy character that locals have long described, half-fondly, as "sweaty saddle."


Young examples are approachable and food-friendly, but the best reward patience, softening over years in the cellar into wines of real complexity, layered with leather, dried herb and undergrowth notes that only time can bring.


That style did not happen by accident. Generations of Hunter Valley red wine-makers have refined their approach to Shiraz through decades of trial, adapting picking times, canopy management and winemaking technique to a climate that offers no guarantees from one vintage to the next. The result is a distinctly regional expression of the variety,

one that wine lovers around the country and beyond have come to recognise and seek out, and one that continues to headline tastings, dinners and cellar door experiences across the valley.


Shiraz may be the headline act, but it is far from the only red worth talking about here.

Cabernet Sauvignon has long held a place as the Hunter's other classic red, prized for its structure and its ability to age gracefully over decades. Hunter Cabernet tends to show generous notes of blackcurrant and dark cherry, layered with herbal and peppery undertones, and a firm tannic backbone that makes it a natural partner for the region's Shiraz in blended wines as much as it shines on its own.


Merlot, too, has found a comfortable home in the Hunter's warm climate, producing wines with a soft, fleshy fruit character that has won over drinkers looking for something a little more approachable without sacrificing depth. And Pinot Noir, though it might seem an unlikely fit for a warm-climate region, continues to surprise, with local winemakers coaxing out lighter, more perfumed examples that capture the variety's signature red fruit and delicate texture, offering a different side of the Hunter red story altogether.


In more recent years, a new generation of winemakers has begun looking beyond the classics, planting Mediterranean varieties such as Tempranillo, Sangiovese, Barbera and Nebbiolo alongside grapes suited to Rhône-style blends.


These plantings speak to a region that, while proud of its heritage, is not content to rest on it. They also make practical sense: many of these varieties hail from warm, sometimes humid parts of southern Europe, and are proving well suited to the Hunter's own conditions, giving winemakers new tools to work with as they continue refining what a great Hunter red can be.


What ties all of this together, from the oldest Shiraz vines to the newest Nebbiolo plantings, is a strong sense of place and pride. Hunter reds are not trying to imitate Bordeaux, the Barossa or the Rhône, even where the grape varieties overlap. They carry their own regional signature: a savoury, earthy thread, a preference for structure over sheer power, and a style built with the dinner table firmly in mind rather than the trophy cabinet. It is a character shaped by more than a century and a half of winemakers learning their vineyards, their vintages

and their craft, one season at a time.
