Beyond these signature varieties, the region's talented winemakers excel with Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay and Verdelho — and increasingly, with a spirited range of alternative varieties. Grenache, Tempranillo, Sangiovese, Durif, Nebbiolo, Barbera, Vermentino, Fiano, Pinot Grigio and Viognier are all producing impressive results, a testament to the region's pioneering spirit and versatile soils. So what exactly makes a wine a "signature" or "flagship"? The definition is wonderfully subjective. No formal industry criteria exist, but flagship wines universally represent exceptional quality — embodying both the grape variety and the region's distinctive character. A winery's flagship might be its most awarded wine, the winemaker's personal favourite, or the bottling that best captures their artistic vision.

2019 Reserve Pinot Noir
This wine is made from 20 rows of Pinot spread across the MV6 and Mariafeld clones. While MV6 is thick-skinned and contributes its signature to the tannic structure of the wine, Mariafeld helps lighten the body and lift the aromas with its intense perfume and vibrant acidity. The dry and cloudy 2019 vintage provided both the fruit intensity and extra time on the vine required for our reserve range Pinot. 20% new oak. 25% whole bunches.
TASTING Crimson with a ruby core in the glass with lifted red and black cherries, cranberry and brown spice. Complex umami, earth, forest floor and layers of cherries fold back on a long fresh finish of silky tannins.

2025 Pinot Noir
A bold, riper expression of Pinot Noir with presence and poise, shaped by mineral-rich soils and sun-drenched terroir. Harvested before sunrise, cold-soaked for three days, gently fermented in open tanks, then matured in 500L French oak (20% new).
TASTING A luminous ruby hue introduces aromas of dark cherry and forest floor. The palate is layered with black fruits and earthy depth, supported by firm yet balanced tannins. French oak maturation adds subtle spice and structure, leading to a long, refined finish.
FOOD MATCH Duck, roast chicken, mushroom dishes or pork with cherry or berry glaze.

2023 Henry Chardonnay
Maturing in a combination of new and aged French oak barrels has imparted the 2023 Henry
Chardonnay with hints of buttery, honeyed vanilla perfectly balanced with fresh, crisp stone fruit flavours. Awarded Gold medal in the 2025 NSW Small Winemakers Show. This wine displays excellent fruit quality and astute wine making.
TASTING The palate is complex and textured with impressive fruit intensity. There are some pleasing French oak nuances that are in harmony with the fruit.

De Iuliis Wines
2025 Steven Vineyard Pecorino
Pecorino, isn’t that a cheese?! Yes, it is, and it’s also a native white variety from the Abruzzo region, where the De Iuliis family immigrated from. De Iuliis Wines were the first in the Hunter to plant Pecorino in 2020. Excellent growing conditions in 2025 led to the production of this outstanding wine.
TASTING The grapes were handpicked and basketpressed. The juice was transferred to neutral French oak barriques to increase texture and palate weight. The use of indigenous yeast adds complexity. Aged in barrel for 9 months on full lees was used to increase palate texture, add creaminess, and soften the naturally high acidity.
FOOD MATCH Pecorino + Italian food = chef’s kiss.

Biosis Blanc de Blancs 2023
Crafted from carefully selected fruit with only the “first cut” chosen for the base wine. Aged on lees for eighteen months, this elegant base wine evolves into a complex and refined Méthode Traditionnelle.
TASTING Pale straw with a fine, persistent bead. Floral aromas with notes of citrus and stone fruits. Crisp primary fruit flavours of grapefruit, white peach and nectarine are complemented by secondary notes of almonds and beeswax, with lovely complexity and texture.
