There’s a fresh energy moving through Bimbadgen Estate as one of the Hunter Valley’s most recognisable wine and hospitality destinations steps confidently into a new chapter. With key leadership appointments, rising winemaking talent, and a renewed culinary vision at Esca Restaurant, Bimbadgen is embracing change while staying true to its heritage.


Leading this next era is Michael Hatcher, newly appointed Chief Winemaker and Head of Sales & Distribution. Returning to the Hunter after more than a decade working across respected Australian wine regions, Hatcher brings a rare blend of technical winemaking expertise and commercial leadership. His philosophy is grounded in crafting wines that speak authentically of their vineyard origins, a perfect match for Bimbadgen’s commitment to producing expressive Hunter Valley styles. His dual role also signals a refreshed focus on brand growth, trade relationships, and elevating Bimbadgen’s position both nationally and internationally.


Supporting this evolution is the promotion of Sam Boyd to Winemaker & Compliance Manager. One of the Hunter’s exciting young talents, Boyd was recently selected as one of just four Australians to participate in the inaugural Australia–China Winemaker Immersion Program, a month-long exchange designed to build collaboration and innovation between the two wine industries. His participation not only reflects his potential but also underscores Bimbadgen’s dedication to nurturing the next generation of winemakers and embracing new ideas.

The change isn’t limited to the winery. Esca Restaurant, long celebrated for its uninterrupted vineyard views, has undergone a thoughtful refresh. Holding onto the same breathtaking setting but introducing an entirely new direction, Esca now offers a 100% a la carte menu, bringing relaxed, casual dining to a whole new level. The shift has introduced a vibrant new energy to one of the Hunter’s most picturesque long-lunch destinations, where guests can now settle in on the balcony with a glass of wine, a cocktail, or light bites while overlooking the vineyards and neighbouring golf course.


With a renewed team, evolving culinary offering, and firm roots in the region’s history, Bimbadgen Estate is poised for a dynamic new phase.
